The microphone is used only while you hold a talk button. Speech is recognized on your iPhone with Apple's on-device speech framework and translated with Apple's on-device Translation framework. Audio never leaves the device and is never saved; the text shown on screen is not saved either.

On first use, iOS may download speech-recognition and translation models from Apple. That download is performed by the operating system; the app itself exchanges no data.
